Our judges are awaiting the arrival of some killer tomato dishes. We have a taste for all kinds of fresh varieties—red, yellow, green, plum and heirloom to petite cherry and tomatillo. Recipes requiring canned and sun-dried tomatoes are welcome, too.

Of course, soups and salads put tomatoes to yummy use. Try incorporating the juicy gems into gazpacho, creamy tomato bisque, a garden-fresh BLT salad or fried green tomatoes with spicy aioli sauce. You could entertain us with appetizers such as bruschetta, tomatoes stuffed with goat cheese or a sun-dried tomato and pesto torte.

Why not inspire us with your saucy thoughts on entrees? A summer tomato risotto, spinach tomato strata or grilled tomato, basil and mozzarella sandwich would be ideal. For something different, give us herbed tomato muffins or sun-dried tomato focaccia bread. Green tomato jam, tomato pesto and rustic chutney would earn compliments by the bushel.

The New York Beef Industry Council will once again be hosting the Create the Perfect Burger Contest on Tuesday, August 30, 2011 during the New York State Fair. New York Propane has graciously donated a gas grill again this year for the grand prize winner.
